Handling Food Hygienically 4N1119 QQI/FETAC Level 4
The purpose of this award is to equip the learner with the knowledge, skill and competence to prepare and handle food safely and hygienically, in compliance with regulation, legislation and current best practice.
Who should apply:
Learners who require an awareness of food hygiene and HACCP within the work environment. People who are involved in food preparation, service of food, handling and storage of food within a wide range of industries including the hotel and catering industry, the care industry, restaurants/takeaways etc…
Any employees whose job entails the handling and/or preparation of food.
Learners will be able to:
1 State the role of the employee in food hygiene and safety including personal hygiene, legal responsibilities and the use of protective clothing
2 Outline how food is put at risk by chemical, physical and microbiological hazards, cross contamination and allergens
3 List food borne illness and the factors which contribute to their expansion
4 Describe how pests can be controlled in and around a food premises
5 Outline the reasons for ensuring that correct temperatures are used in food preparation and production including the limitations of temperature control and procedures for recording food temperatures
6 Use safe and hygienic food handling practices including HACCP, for food preparation, cleaning, waste disposal and pest prevention
7 Refrain from unhygienic practices in food production
8 Complete a range of basic food safety documents and records

The grading of the QQI/FETAC component is as follows:
Pass - 50-64% Merit - 65-79% Distinction - 80-100%

It is expected that applicants will possess good interpersonal skills, like working with people, be a good team player and have an interest in food and cooking in order to ensure successful participation in the programme, through a formal qualification or through relevant life and work experience.
Following successful completion Kilmuckridge Centre of Further Education will offer a QQI/ FETAC Level 4 component in Handling Food Hygienically 4N1119 QQI/FETAC which is a Level 4 on the National Framework of Qualifications.
Handling Food Hygienically 4N1119 QQI/FETAC Level 4 is a component of Culinary Techniques Level 4 Learners who successfully complete this programme may use the associated credits as a stand alone qualification or as one component of a Major Award, with a view to moving up to the next level.
All training is delivered in a friendly and comfortable training centre with experienced and dedicated tutors focusing on ensuring each trainee is given every opportunity to learn the necessary knowledge, skills and abilities in order to excel in their catering role.
